I have been cooking in competitions for about 17 years and have been on cooking teams that have made it to the big show stage numerous times in Memphis In May World Championships.. we have won Hot wings, placed 3rd in shoulders, and placed 4th abd 2nd and 1st place in Ribs.(the grand=daddy of them all.) also love to cook in other food competitions..Italian, Cajun, Hot wings, Chilli if it can be cooked and used to entertain my friends i like to do it . and would like to learn from others and share what i have learned by success and mistakes. I have been with the PORK"O"SAURUS BBQ TEAM for 4 years and the 10 of use have a tremendous amount of experience that we love to share about cooking. so come on in and join in the conversation,

Ok for all those of you that did not make the trip to Memphis for the BBQ Fest, here is a little overview of what took place. Due to the weather the previous week during Music fest the park was a total disaster. It looked like and felt like we were setting up in a BarnYard for cattle and Pigs and smelled about the same..But not withstanding PORK'O'SAURUS persevered and built a really nice setup and held one hell of a party. From all our friends and guest from all over the globe and continental U.S. we put on one heck of a feed and party. Needles to say all our days were long starting at 4.30 am and ending at 12.30 to 1.00 am. and did it for 4 days. Of course we entered all of the ancillary events and our speciality of RIBS. on Friday after the ancillary events were completed with Jamaican Jerk shrimp, Lamb Rib lets,Beef Kabobs,Steve's Glazed chicken, Sam's habanero hot wings, Beans we ate some mighty fine appetizers that afternoon! On the second note that was the day that i was OVER SERVED by myself and my friends. i was proud of my recycling with the use of the 1/2 gallon vodka bottle converted to a drinking glass for all of my liquid libations and i proceeded to get a little overdone!!!!!! But with the great traditions of my bounce back techniques i was up an at it at 4.30 am for the competition .





Well the great news is that we brought home a trophy and placed 6Th out of 108 rib teams and were only 3 tenths of a point out of finals, man them ribs were fantastic. also we ended up in 6Th place in People Choice. So once again PORK'O'SAURUS has done a great job and everyone pitched in and got it done.... so here are a few pictures of the event and hope everyone plans on coming down next year if you missed it this time around..

MEMPHIS BBQ FRIENDS FROM ST. LOUIS


Suzanne and Terry have been coming down to Memphis In May BBQ festival for about 5 years now. I just happend to meet them out on the sidewalk in front of our booth and invited them in and the rest is history. They make it a anual pilgramage to eat our food and and drink our drink and visit with us and just take in all of the great smells, tastes, and sights down on the mighty Mississippi. This is in front of our booth last year. We will miss them this year as they can not make it due to their son Graduating. We shall see them again next year..

Recipes to tryl


a couple of weeks ago i came up with a really good dipping sauce for hot wings and it is great on seafood. I call it Benjie's Bamango sauce. to make it you use plain yogurt,bannannas,mangos,brown sugar, salt, lime juice, cinammon, orange juice concentrate. and you mix it up in blender until it is smooth and creamy, it was the talk of the town at the Southern Hot Wing Festival.. i will go into detail on exact recipe later. join in and lets talk cooking...
